Iced Strawberry Latte with Salted Honey Foam

Summer is in full swing, so it's been pretty hot lately here in Arkansas. In this weather I often don't want to drink a hot coffee drink, so this has been my go-to iced drink lately. It's an iced latte with a strawberry syrup with a salted honey foam on top. And, as always, please change this up to your taste. This is really more of an inspiration recipe than any sort of strict rule.

Strawberry Syrup
- 250g strawberries, de-stemmed & sliced
- 200g water
- 200g sugar
Put these all together in a saucepan and bring it to a boil, then reduce to low heat and simmer for about 20 minutes. Let it cool, then pour it through a strainer into a storage container (no need to mash the berries, that will cloud it up). I prefer a squeeze bottle to make it easy to use later. Store in the fridge for up to a week.


Salted Honey Foam
- 1/4 cup whole milk
- 1/4 cup heavy cream
- 3 tsp wildflower honey
- 1/2 tsp flaky salt
Combine and use your preferred foaming method to get something that's like a soft whipped cream. You can use a wand foamer, a foaming pitcher, a cocktail shaker, or even a French Press.


Iced Latte (putting it together)
- 2 oz espresso (or strong coffee)
- 3/4 oz strawberry syrup
- Salted honey foam
- pinch of freeze dried strawberry powder (just blitz some freeze dried strawberry in a blender)
- pinch of bee pollen (may also want to blitz or crush this)
Freeze a cocktail shaker ahead of time. Add ice (~100g / 3.5oz) and milk (6–8 oz depending on your preference) to the cold shaker. Pull a double shot of espresso and  stir 3/4 oz of the syrup into the hot espresso first. Then pour the espresso in with the milk and ice. Shake it well and pour into your glass (whether or not you pour it in with ice is your choice), but leave some room for the foam. Spoon or pour the foam over the top and dust it with a little freeze-dried strawberry powder and bee pollen.

We tend to drink things on the less-sweet side, so I'd start light on the syrup and add more if you want it sweeter. Play around with it and let us know how yours turns out!
