Salted Oat Lavender Latte Recipe

It's springtime! Which means it's time for wonderful spring flavors! My wife and I have been enjoying some salted oat lavender lattes, so I want to share how I make them.

Lavender Simple Syrup
I followed this recipe, but if you just want the short version:
- 1 cup water
- 1 cup sugar
- 4 Tbsp dried culinary lavender buds 

Heat all the ingredients together and simmer until sugar is dissolved. Cover and remove from heat. Steep for about 20 minutes. Strain syrup into a container. Refrigerate and use for up to a month. I found that this squeeze bottle works well.

Salted Oat Lavender Latte
- 1/3 oz lavender simple syrup
- ~2 oz espresso (we use Colombia La Unión)
- 8 oz oat milk
- 1/4 tsp flaky salt

If you already have an espresso machine and make lattes, the only thing that might be a bit different for this one is adding the salt to the milk before you steam it. If you're worried about damaging your steam wand, you can add the salt to the espresso instead, but I really like the salty hit you get from the milk on top.

If you don't have an espresso machine, here's an alternative that can still be pretty tasty. Brew a strong cup of coffee (you won't use all of it, probably 3-4 oz; to brew it stronger just increase the amount of coffee and decrease the amount of water you use). While your coffee brews, add the salt to the milk (use a bit less for this, probably 6-7 oz) in a saucepan on medium heat. You don't want to boil it, just get it hot. Transfer it to a pre-heated mason jar (you can use hot water for that), and seal it well. Shake it vigorously for about 30 seconds. Pour the coffee and syrup together in a mug and stir. Add the milk gently. The foam from shaking it should float on top.

Of course, please adjust everything to taste. We tend to drink things on the less-sweet side and my wife likes to add extra salt to hers.
